Mujadara Recipe

- 1 cup brown or green lentils, rinsed
- 1 cup long-grain rice, rinsed
- 3 medium onions, thinly sliced
- ¼ cup olive oil
- 1 teaspoon ground cumin

- 3 cups water or vegetable broth

Step 1: Cook the Lentils
Place the lentils in a saucepan with 3 cups of water. Bring to a boil, then reduce the heat and simmer for about 15–20 minutes until they are partially cooked but still hold their shape.
Step 2: Caramelize the Onions
While the lentils cook, heat the olive oil in a large skillet over medium heat.
Add the sliced onions and cook slowly, stirring occasionally, for 20–25 minutes until they become deep golden brown and crispy around the edges. Don’t rush this step—the onions are the heart of authentic mujadara.
Transfer half of the onions to a paper towel-lined plate for garnish.
Step 3: Add the Rice
Add the cooked lentils (with most of their cooking liquid), rice, cumin, salt, pepper, and the remaining caramelized onions to a large pot.
If needed, add enough water so the liquid sits about ½ inch above the rice.
